Millet is a protein and vitamin rich seed that cooks like a grain. Its mild flavour and crunchy texture complement a variety of dishes, from stews to salads. You can also pop it like popcorn or use it as an oat substitute in porridge.

Millet has been farmed for over a thousand years; in Italy it was widely used at the time of Romans and during the Middle Ages when it was considered an excellent substitute for meat.

Fontana FORMIELLO millet is grown in northern Italy in the foothills of the Alps.

Boil three parts of water for each part of millet and simmer for 20 mins until tender. Add more water and stir frequently during the cooking process to make a creamier millet.

Lightly toast millet before cooking to enhance the earthy, nutty flavour. Toss in salads or add to omelettes. Boil in milk instead of water and add some maple syrup and fruit for a tasty porridge.

Pop millet like popcorn, place a small amount in a dry skillet and shake the pan until you see a slight change in the colour and shape. Popped millet is smaller than popcorn and can be used also in place of breadcrumb coatings.

Store in a cool dark place. Once opened, store millet in a tightly sealed container.

Whilst we prefer to avoid plastic, this solution results in a longer shelf life and consequently in reduced food waste.
